Well Adam seems to be on the road to recovery. He has only thrown up twice in the past few days. Once Tuesday evening and then again this morning. The doctor said it is to be expected. Ugh. Poor guy. He has been on bottled breastmilk and the occasional bowl of rice cereal. We are keeping his meals simple until he is back to 100%. For being a sick fellow he is in a great mood. My sweet little man.
Speaking of Boo Boo. He is getting some top teethe in right now. It looks so cute because his two front teethe aren’t quite in yet, so when he smiles he looks like he has fangs. Like a cute baby vampire. I love it.
Last night I did some much needed cooking. It was so nice to actually sit down and eat a meal instead of heating up something from the freezer and running out the door or to the ER or to go clean up puke. I made a lentil rice loaf. I served it with brown gravy, mashed potatoes and fresh squash from Nana’s garden. It was really good.
I have been busy getting ready for our trip to the beach. We are leaving early Sunday morning. The cabins have a kitchen so I am cooking some food to bring. This morning I made chocolate chip banana bread, some soy mayonnaise for sandwiches and there is tofu dehydrating right now for some cajun tofu jerky. Yum.
Ugh, since I mentioned sandwiches I will tell you this story. I am an idiot. I actually blame having a sick baby and sleep deprivation on this error. So yesterday I was making VeganDad’s lunchmeat recipe. I have made it before. It is awesome. Well I steamed it and the next step was to bake it in the oven. I took it out of the foil, put it in a casserole dish and it started baking. This may not seem like a problem. Well if you have not made vegan lunchmeat. This was a BIG mistake on my part. You have to leave it wrapped in the foil. Why you ask? It will expand and I am not talking about a little expansion. More like the size of three footballs. Then it deflated and tasted like crap. I will be making more tomorrow and this time I will make sure my head is not up my arse when I read the recipe. Oh how I hate to waste time and money.
It has been hot here. Very hot. Today it is 100 degrees Fareheit with a heat index of 107F. Crazy. So I have been baking early in the morning and making sure the oven is off by 10am. Don’t get me wrong, I love the Summer. but this is getting to hot.
