Sorry I played a disappearing act yesterday (and most of today)! I’ve been in the trenches with a few projects, and I hope you get to hear about them soon!!!
When I was a child, I really did NOT like the taste or texture of oatmeal. I would not touch it unless it was in the form of a cookie or granola bar. What?!?! As you well know, things have changed! Lately, I have been taking my time in the morning and making stovetop oats! Relaxing mornings = lovely stress-free days (usually).
Apple Cinnamon Stovetop Oats
1/2 c. oats (I use half regular old-fashioned and half rye oats) 3/4 c. almond milk 1/4 c. water 1 apple, cored and diced 1 tsp. vanilla 1 tsp. cinnamon 1/4 c. brown sugar 2 tsp. agave nectar Garnish with almonds, and a pinch of brown sugar and cinnamon!
1. Add oats, milk and water to sauce pan over medium heat. Let oatmeal cook until bubbly! 2. Add apple, vanilla, cinnamon, brown sugar, and agave nectar. Allow to cook for another 2 minutes or until creamy. 3. Dish and garnish with almonds, brown sugar, cinnamon or other toppings of your choosing!
See how easy it is!?!? I made a large batch a few days ago and we had breakfast for two more days. Just add a touch of milk, reheat, and you have more oats in just a minute! It’s that easy.
