Almost every day this week I've been having some sort of tofu sandwich (my favorite being Blackened Tofu!). When I really like something I have a tendancy to eat it all the time. But I thought...My blog would be extremely boring if I made the same thing all the time so today for lunch I made Falafel from Skinny Bitch in the Kitch. This is only the 2nd recipe I've made from this book but it turned out delicious! I have made Falafel before from another recipe but didn't like it, but I really liked this one. Nice and crispy on the outside, moist and tender on the inside. It was a scrumptious replacement to my usual tofu. Ahh! Tonight or tomorrow night I think I am making dinner for my gramma and uncle. I think i'm going to make Chickpea Cutlets and Lemony Roasted Potatoes (both from V'con) along with some sort of green vegetable on the side. Last time I omitted some oil but this time I will make them with the oil and maybe a little smaller because last time I stretched them too wide. That way, they will be thicker and I will have more leftovers =] Do you think this is a good dinner? I'm so nervous!
