Not what's eating me, what I've been eating

I have been making this dish for myself lately.
It's my own recipe, of course

Apple Squash Cheese Mock Duck Instant Dinner

Serves one
1 apple medium Granny Smith apple
1 small summer squash, whatever kind you like, the same size approx as the apple
1 12oz can of Dragonfly brand " Vegetarian Mock Duck " (it's seitan shaped like a duck in a salty/sweet sauce. More on this some other time)
1/4lb of Queso Fresco (or blanco)

Core and chop the apple, and chop the squash and the Vege duck all into bite-sized pieced and put them in a large microwave safe bowl.
Crumble the cheese over the top and microwave on high for 3-4 minutes or until the cheese starts to get brown and crispy on top.

I love this dish and only didn't make it tonight because I was too lazy to go to the store that has all the ingredients.
Instead I made this
Apple/Onion Tomato Rice soupy dinner.
Serves 1

1 Red apple, cored and chopped, peel on.
1 Onion peeled and coarsely grated
1 12oz can of tomato juice, the drinking kind.
1 handful or so of rice

All in a sauce pan with a bit of water and a good amount of oregano or spice to your taste.
Simmer for an hour or so to reduce it and get the apples all mushy and the rice fully cooked.
I put one sugar cube in this and sprinkle a bit of salt on top, just before it's done.
Cook until it's thick but still soupy, like stew or goulash consistency.
Take it off the stove when the rice starts to stick to the bottom of the pan, is what I do.
Let the pot sit with a lid on and when it's cool enough, eat it.
