Ive had so much to blog about lately, but just dont seem to have the time to put together the posts. So here's some of what ive been doing this new year.
Mikey and I welcomed 2010 watching the fireworks which were set off the local Glenelg jetty. We sat on the beach away from the crowds, and had quite a nice view. During the day it had been a very hot 41 degrees but by the evening it had cooled down, and because we were sitting on the beach it was nice and cool.
The fireworks display was really lovely...
And of course we had to have sparklers...

Last week Mikey had the excellent idea to make biscotti! We used a recipe I had copied down and made a couple of years ago, Mikey used eggs for half of the dough and I used Not Egg for the other half.
Sorry im not quite sure where this recipe was from originally, I made a couple of changes to it anyhow.
Almond Cinnamon Biscotti Makes approx 30
2 C plain flour, sifted 1 ½ teaspoon baking powder ½ teaspoon ground cinnamon ¾ C caster sugar ¾ C blanched almonds, crushed 3 eggs, lightly beaten (Or Not Egg egg replacer equal to 3 eggs) ¼ C dried apricots, diced small ¼ C choc chips (I used Sweet William brand) 1 teaspoon vanilla bean paste
- Preheat oven to 160 degrees C. - Combine flour, baking powder, cinnamon, sugar, almonds, apricots and choc chips. - Add eggs (or Not Egg) and mix to form a dough. You may need a little more liquid if using Not Egg. - Knead dough on a lightly floured surface until smooth. - Divide dough into 2 logs. Place on a baking tray lined with bakibng paper and flatten slightly. - Bake for 30 minutes. Cool slightly then slice into 4mm thick slices. Place slices flat on baking tray and bake for 10 minutes on each side or until crisp.
They tasted best on the day of baking, the day after they became a little soft.
