Happy Move Over Meat Monday Everyone!!

Today, I'm going to give you a meatless method or recipe if you will for mushroom burgers. My friend Moody sent me a chastising e-mail concerning last week's post about chicken. He was a little miffed that I didn't provide him with a meatless alternative for his dinner last week..sorry Moody!! LOLOL!

So, I'm making it up to him and anyone else today who was disappointed last week. I will most often post about veganism and give you facts about animal consumption on Mondays. In conjunction, I will do my best to also give you some meatless options to try within the same post. However, it may not be every Monday, so be sure to stay posted throughout the week and check the archives for other recipes or methods that I posted previously.

Now, on to the mushroom burgers. I think these are a great alternative to meat if you like mushrooms. All you need is some portabello mushroom caps, some organic whole wheat buns and any toppings you like. How you prepare the mushrooms is up to you. You can cook them in some olive oil in the pan on the stove or wrap them in some foil and put them in the oven. You just want to have the caps cooked through.

Once the mushrooms are done, just put them on top of a bun and you can top with sauteed onions, spinach, tomato, avocado..whatever your heart desires. The basic idea is that instead of using ground meat, you are substituting with mushrooms! I find these to be very filling and satisfying. I usually pair these with some hand cut potatoes that I bake in the oven.

Mushrooms are fat and cholesterol free and low in sodium. I learned by watching the food network to never rinse mushrooms, but wipe them with a damp cloth instead. Also, when seasoning mushrooms, it's best to let them cook down some before adding salt, as it will draw out excess water.

So, next time you are looking for a hearty "burger", stroll past the meat and snatch up some portabellos! For those of you those of you that don't care for mushrooms, stay tuned, I will be giving you some alternative "burgers" to make in the future!
