Light and Creamy Avocado Soup

I was walking through the grocery store when I noticed a sign over the bright kelly green Florida avocados that read 4 avocados for $5, what a steal! Obviously I couldn’t resist such a great bargain so I decided to buy one. Originally I intended to use it as an excellent addition to a simple salad or sandwich. However, I feared that that avocado would ripen too fast and as one person, I suspected it might go bad before I had the chance to enjoy it all, so I decided to make this delicious creamy soup instead. This way I would be able to take my time and savor it for several meals.

Now normally I would classify this as more of a summer recipe, however with the Florida temperatures still obnoxiously high and the relentless humidity lurking throughout the air, I think this recipe is absolutely appropriate! This is an absolutely delicious and filling meal and the best part is it’s extremely easy to make with a combined total prep and cook time of only 35 minutes. You’ll notice that the soup has a slight citrus flavor from the lemon juice which pairs nicely with the creamy avocado. The gorgeous pastel green color of the soup combined with the delectable flavor makes this an automatic favorite recipe!

Ingredients
3 cups of vegetable broth
1 very large, ripe Florida avocado sliced
1/2 cup of onions chopped coarsely
3 cloves of garlic chopped
1 tbsp of olive oil
1/4 cup of lemon juice
1 tbsp of cilantro
1 tbsp of cumin
1 tsp of red pepper flakes (optional)
1 tsp of green onion
1/4 cup of corn
1 tbsp of vegan margarine
1/8 tsp of garlic powder
1/8 of a tsp of paprika
 A sprinkle of cayenne pepper

Buttery Avocado

Method
Begin by heating oil in a sauté pan over low to medium heat; add in onions and garlic and sauté until onions become translucent

Add avocado to the blender followed by the vegetable broth

add in lemon juice
add in sauteed onions and garlic



add in cilantro add in cumin  Add in red pepper flakes
blend together until the soup has a creamy and smooth consistency  In a sauté pan add in butter over low to medium heat, add in corn and let brown add spices and mix together with corn to make sure corn is well seasoned, set aside Transfer soup into a mixing bowl Mix in corn and green onion into creamy soup
This soup is absolutely delicious served warmed or chilled. If you prefer a warm soup simply pour soup into a sauce pan and let simmer for about 20 minutes or until completely warmed
If you prefer a chilled soup simply pour soup into an airtight container and refrigerate for 2-3 hours. Ladle out 1 cup of soup and enjoy!
