Life’s a beach….

***Warning, beach cuteness overload!

And boy was I glad to be there. The weather was perfect, the water temperature was perfect and we all had a blast. Arthur loves the water. He is fearless. He kept running into the ocean. He didn’t care if a wave knocked him down. We dipped Adam’s feet in the water and he tried to eat sand. Too cute. There was a nice breeze every day. We checked out the local art galleries, went to the birding center, played at the playground. Of course we hit the beach every day. We also went to the Texas State Aquarium. It is cool because they have rescued animals there. Animals that were owned by a person privately who didn’t know how to care for them, animals that were injured in the wild and could not survive so they now live at the aquarium and animals that were lost. Arthur loved it. When we told him we were going to the aquarium he asked me if we were going to see Spongebob’s cousin. He is so silly.

I cooked while we were at the beach. The cabins we stayed in had kitchenettes. There is no food for veggie people in the little beach community. Every restaurant has fish or some meat dish. I made some spicy sausages to go with saurkraut on some homemade buns. We ate them with sweet potato fries. I also made some zucchini corn tacos. It was a recipe adapted from Vegetarian Times. I served it with some refried black beans. We also ate some hummus and pitas one evening and some mac and cheeze another.

I am glad to be back. We discovered after a very rough night with Adam that he is a baby who likes routine and not much disruption in his schedule. We had a blast at the beach, but boy did we pay for it last night. He was not a happy camper. Hopefully he will get back on schedule ASAP. It breaks my heart to see my baby Boo Boo cry.

Well I am off to do some laundry and cook since I have been away. I hope you each have a lovely weekend.
