I was flipping through my copy of Vegan Vittles after realizing I haven't given many of my cookbooks the attention they deserve, and I found this amazing concept: the marriage of kale and sauerkraut...in sandwich form. Whoa. I'm pretty sure I've seen this around the net, but I'd never tried it myself. The ingredients are so simple (kale, kraut, dijon mustard, tahini, bread), but the result is stunning. Tangy and toothsome. The texture is nearly (nearly) meaty. I used Ezekiel sesame bread and Real Pickle brand kraut (once you try Real you'll never eat another kind of pickle again! OK, unless maybe it's Hawthorne Valley Farm , but those are the only two!). This recipe is highly recommended - perfect for this time of year when most things aren't quite in season yet.Also, this has not been proven, but a sandwich like this could possibly convert those kale haters into kale lovers.
