Moving on to what this post is actually about... Homemade Almond Milk! I love almond milk. When I first became vegan, I must have bought four different kinds of non-dairy milk (in one week) before I finally tried almond milk. As soon as I tried it that was it for me. I haven't bought another kind of 'milk' since (with the exception of coconut milk which I love to use when I'm baking). When I learned that you can make almond milk I was psyched! How cool is that? These days, I make my own almond milk whenever I can and only buy it when I need it in a pinch or I'm being lazy. Even so, you can be lazy and still make almond milk. It's that easy.

1 cup almonds, soaked overnight
Usually when I make almond milk, I only add almonds and water. But sometimes I like to give it some flavor so I'll mix it up and add different things. These days my favorite thing to add to it is cinnamon. I love the flavor that it gives and it's perfect for when I'm using the almond pulp in baking.
