German Spudkraut

Lily got her head stuck in a tomato can this evening. Scott & I were cooking, didn't have our eye on her for maybe 5 minutes, and tada! head wedged into a 24oz tomato can she found in the recycling bin. If only she would learn a lesson from this...



On to the food! We inherited this giant bottle of fancy sauerkraut and Scott's been asking me to make something with it for weeks. I'm not terribly familiar with German cuisine, but I figured beer and sauerkraut had to go together, right? I don't drink beer so I enjoyed watermelon and potatoes. Scott's reaction to the dish was that it was interesting, he really liked the "bacon" and that the dish tastes exactly like you think it would. If you like mashed potatoes, beer and sauerkraut, this is for you, I guess. Oh well, food is like fashion, right? You have to push the envelope to be considered a diva and sometimes, well, sometimes you end up on the worst dressed list.



1 small onion, diced

2 pinches salt

1 generous tsp of thyme

1/2 tsp garlic powder

1 cup dark beer (may use non-alcoholic)

2 cups sauerkraut

black pepper to taste

chives - garnish



optional additions:

1 cup mushrooms

vegan bacon crumbled

vegan sausage patties



Directions:

1. saute onions in 1/4 cup water until translucent and the water has cooked off

2. add other ingredients and cook until the beer has reduced to a thin sauce



serve over fat free mashed potatoes.
