This evening we had a lovely mix of flavors. I made quinoa, topped it with pinto beans, fresh, chopped, kale, a homemade chipotle tomato sauce, and a spoonful of cilantro pesto. It was so good. I can’t wait to eat the leftovers.
The hubster said is this, “fusion, or conFusion?’ I said, “fusion, maybe. ConFusion is leftover night when you have a mix of all the meals you ate during the week.” You know, leftover tacos, with the soba noodle salad. Ha ha. Fusion or conFusion, either way, the dish was delicious!
It was another hot day here. I had to do some baking. Our oldest son is at a Spanish camp this week, and the theme is, Around the World. Tomorrow they are having a potluck, and we are supposed to bring something from our heritage. I made Scottish shortbread, and hamantashen. They both turned out tasty. The hamantashen did leak outside of the dough while baking. Josh said it is because I didn’t use 8 eggs in it, like most Jewish recipes call for. He’s a wise guy!
