Salad made with organic green leaf lettuce, avocado balls, apricots, tomatoes, blueberries
and a side of spicy nut pate.
1 c raw cashews, soaked overnight then drained
½ c raw walnuts, soaked overnight then drained
1/2 c water
juice from 1 small lemon
1 clove garlic, minced
1/2 tsp. herbamare
Add after above is blended:
½ tsp. dry mustard
1 TB apple cider vinegar
¼ tsp. turmeric
diced green onion
cracked black pepper
Blend water, lemon juice, garlic, herbamare, and cashews/walnuts in high-speed blender.
Blend until smooth.
Transfer mixture to a medium-sized bowl.
Gradually stir in the mustard, apple cider vinegar, and turmeric until it reaches the color and flavor you desire.
The turmeric will make it golden yellow.
You can add diced celery, parsley, green onion, black pepper or whatever you like.
Serve on lettuce leaves, or spread on raw crackers, stuff in a tomato, or use veggie sticks to dip.
