My first weekend from school... ahh I love being able to sit down, have a nice cup of green tea and leisurely eat my breakfast. I wanted to go all out so I madeFrench ToastfromErica's Blog. Can I just tell you, no matter what I've said before...this is the BEST french toast I have ever had! It tasted just like the real thing but better. From now on I'll be looking forward to my weekends even more just because I'll have time to make this. I savored every bite and relaxed. I made one change, I used brown rice flour instead of WW and I had a side of fresh berries too. The perfect breakfast! I had a bunch of zucchini left in the fridge so I madeZucchini " Mozzarella" SticksfromHappy Herbivore. My breadcrumbs were a little bigger than most but they were still delicious! I also had a grilled eggplant sandwich with spinach and some baby carrots on the side. So good. Dinner was a small meal because I had a huge bowl of cereal for a snack, so I just made a small stir-fry. It had zucchini, yellow squash, eggplant, spinach, carrots, and ginger. Then I topped it with spices, marinara sauce, and vegan parm. I used to make one of these every night and now I remember why, it is so flavorful and filling even though it's just simple veggies and spices.
