Inspired byEricaandHeather, I decided to make this Candle Cafe-like dish for breakfast. I know it's not my usual breakfast food but I wanted to try it so bad! I steamed 2 huge handfuls of spinach with some black pepper and red pepper flakes. Then I added 1/4 cup dry millet, 3/4 cup sweet potato puree, 1/3 cup chickpeas, and a dollop of salsa on top. YUM! This was great, all the flavors went so well together and it gave me so much energy for the day. Since it's fall, pumpkin is a flavor I can't get enough of. I made the Punk-kin Pasta from LaDolce Vegan but halved the recipe and used rice instead of pasta. Wow, I would have never expected it to be so delicious. At first I thought the ingredients were weird but the taste was soo good. Even though I halved the recipe, it made a lot of sauce! I only had about 3/4 cup of rice with 3/4 cup of the sauce and I could even finish the whole thing! I was super stuffed after half actually but I forced myself to eat a bit more. I made these cookies yesterday but forgot to post! They are the Low-Fat Chocolate Chip Cookies from Happy Herbivore's e-cookbook. I've been dying to make these and I'm so glad I did. I used GF flour and chocolate soymilk and they still tasted amazing! My favorite kind of cookie is soft and cakey and these were perfect! I ate 2 right out of the oven =0. I had my mom try one and she said they were really good and rich in flavor. This is definitely my new go-to cookie recipe!
I do feel guilty about eating those 2 cookies...my mom said they were so rich she couldn't finish a whole one so I feel like a pig for eating 2!! I also am feeling too full for my liking after that lunch. I've been trying to eat more but I hate the feelings I get afterwards =(
