Experimenting with New Flavors

Today I wanted to try something new for lunch, so I madeKung Pao "Chicken"from theFatfree Vegan Kitchen.I've never had the real "chicken" dish but this was excellent! The sauce was the icing on the cake. It was delicious. I did notice at the end of cooking it, a lot stuck to my pan...so I just added more water to the pan and some arrowroot powder and made more sauce. I drizzled the sauce on top and served it up with my favorite bean Chickpeas!
Today I had nothing planned so I decided to make muffins. I've been putting them off for a while, but finally got around to making them.Theseare also from the Fatfree Vegan Kitchen and my first time working with zucchini in a baked good. I cut the recipe in half because I know my brothers would not be eating them, but I didn't know how to cut the egg replacer in half...Do you use the whole "egg" or do you have to use something else?? I just replaced it with applesauce, which did make them come out kind of chewy on the outside. I will try the full recipe again soon. I did like the taste, and it was funny to think I was getting some veggies in a dessert. =]
I was exhausted today. I jogged 1 mile!! I am running around 10, which is 2 hours after I typically eat breakfast. Is it better to go before or after? I'm new to this jogging thing. I'm trying to find healthier ways to keep slim (more on this later).
