Easy Veggie Cabbage Pizza & a Dolphin Cruise

Wow, two posts within 3 days, that must be a record for me!

Like I said in my last post I have lots to blog about, but not enough hours in the day.
First things first. The ever so lovely Oraphan of Easy Veggie is having a giveaway, to enter we were asked to make a recipe beginning with Easy Veggie, what a great idea don't you think?

This recipe may sound a little odd to some of you, but I assure you if you try this for yourself you will not be dissapointed. Its so easy to make, and you can add all of your favourite ingredients on top.

Easy Veggie Cabbage Pizza

¼ cabbage, sliced thinly.
1 red capsicum, diced
½ onion, diced
2 carrots, peeled and grated
Sliced black olives
Canned corn
Cheezly edam style cheese, grated
2 Tablespoons oil
Large pita breads
Pizza sauce
Cream cheese

- In a frypan or wok, heat oil. Add onion, carrot and capsicum, cook for 5 minutes then add the cabbage. Cook until all veggies are soft and cooked through.
- Spread each pita bread with cream cheese followed by pizza sauce.
- Spread a layer of cooked cabbage mixture over each pita bread and then scatter corn, olives, cheese and herbs over the top.
- Cook in 200 degree oven until cheese is melted and pita bread becomes crispy.

Easy as that! You can also add other toppings you usually have on your normal pizza.

Last month Mikey and I went with my parents on a dolphin cruise along the Port River. The occasion was my mums birthday. We were so lucky to see about 10 dolphins during the cruise, the only thing was theyre faster than my camera so I didn't get any photos of them.

The boat was quite big, three stories high. We sat at the back of the boat, heres Mikey and my parents enjoying the view.

There were lots of big ships along the river, many carrying cargo containers like this one...

When we got off of the cruise there were these two ladies playing huge long hornes, the strangest instrument ive ever seen, have you seen anythig like it before?

This week Mikey and I went to see Avatar in 3D! Have you seen it? I hadn't seen a 3D movie before and I thought it was pretty good, besides that poor Mikey was super sick with a migrane and vomiting for the rest of the day...apparently that happens to some people with 3D movies.

We also went to see Cats at the Festival Theatre this week. I thought it was pretty good, I loved the costumes and makeup but it didn't have much of a story line which was a little dissapointing.

Sorry, I didn't have enough time to post the photos of my op shop finds, so they will come in the next post. Tomorrow I have to 'officially' register as a nurse and pick up my uniform, so it will be a busy start to the week.
