Dance, Dance

I hate to do this...but I'm totally on someone else'sinternet right now. I cannot for the life of me connect to my family's computer and I can only upload pictures to my laptop. I really need a new computer.
In other news, it was a beautiful 55* today! You can bet I spent some time outside enjoying wearing no coat! I got to roll my windows down while driving and everything. How exciting! I can truly say I was in such a great mood today and I haven't felt this good in a long time.

Saturday mornings are usually very leisurely and today was no different. I always make the things I don't have time for on the weekend so today I picked theNoggy Blueberry Bread PuddingfromKrista's Kravings. I used 2 slices Sesame Ezekiel (more on this later), flax instead of eggs, and plain ricemilk instead of soynog. While this was cooking, I munched on a teeny pear and sipped some green tea. I smelled so good coming out of the oven! So cinnamon-y and fruity. I really enjoyed this and it was the perfect decadent yet healthy Saturday morning breakfast. After this I had 1 tbsp Dark Chocolate Dreams PB straight up on a spoon! Yum.

No morning snack today, I ate breakfast later than usual and I just wasn't hungry. I did have 2 dried apricots but nothing worth a picture.After I got ready for the day I started on lunch. I madeGliding Calm Tofufor the first time! I used TJ's brand Tofu San cut really thin and used her marinade (minus the oil) to coat my tofu. I baked it for 30 minutes and out came some super crispy tofu! It was almost like tofu-chips and trust me, they were tasty. Love the marinade, I will be using it more often. I also had 2 carrots-chopped, 3/4 cup steamed broccoli, and a tiny apple (not pictured, why are all my fruit so small haha ).Lunch was delicious, but very light. I decided to bake up a Pumpkin Cookie for One inspired byLaci! I followed her recipe but of course made a couple changes... I used GF AP flour instead of WWPF, 1/2 pkg. stevia instead of sugar, and didn't add chocolate chips. It made a HUGE cookie! It turned out really soft and moist on the inside so next time I think I will make two smaller cookies or just bake it longer. The flavor was very very good though and it was the perfect sweet treat after lunch.When I finished lunch I decided to go to Target to pick up a couple of things. When I got home it was snack time so I enjoyed this hearty bowl of PB Puffins while reviewing some of my recent purchases...Yoga Journal, Shape Magazine, a new recycled binder for school, and an adorable new journal. I've always wanted to start writing again so I thought a new one might help me get started. After my snack I cranked up the music in my kitchen (my family was at the Field Museum in Chicago so I was alone) and danced with a passion! I haven't danced like that in a long time. I've always just done it to lose weight and burn calories but I really enjoyed myself today and felt like I was just having fun.I guess all that dancing stole my appetite because I wasn't hungry for dinner at all! I made myself eat anyway and as soon as I started eating, it was as if I was starving! On 2 slices of Sesame Ezekiel bread I spread 2 tbsp Oasis Roasted Garlic Hummus and added 3/4 cup baby spinach. On the side I had Edamame (overcooked in the microwave, but I like em crunchy!). Mmm, this was amazing. When I went to TJ's the other day the only plain ezekiel I could find was the sesame kind. I was always hesitant to get it because I thought it would be higher calorie or fat but when I looked it was identical to regular. I'm so glad I bought this though! Lately I've been noticing that my ezekiel bread is sliced very thin and either is too soft or too hard. It also has big holes in it and tears very easily. The sesame kind was perfectly sliced and was soft just like regular wheat bread. This made the sandwich and I might just buy that kind from now on! The hummus was also a new find-on sale $1.99 at the health food store! I picked it up because of it's low fat content but when I got home it tasted like the other higher fat brands. Very smooth, thick, and creamy...a major improvement over the last kind I tried.


Since my computer is acting up I didn't get to photograph my snack. I just finished a plate of Better n' PB (2 tbsp) with a sliced Apple. I have missed this classic combo which I used to eat all the time when I first became vegan (with full-fat PB of course). Now I'm just ready to relax and paint my nails! Have a great night babes!
