Curry Mac Salad and Smoked Potatoes (fat free & gluten free & soy free)

I used gluten free corn macaroni for this flavorful salad. The combination of fresh clementines, mint, parsley, curry and lime make this a hit. The ingredients are to taste so go as heavy or light as you prefer.

Cook gluten free cut macaroni of your choice. I used a no GMO, soy free and gf corn macaroni that cooked up perfectly.

3 clementines, peeled and diced

1 shallot, diced

fresh: parsley, cilantro, mint, basil – minced

1 medium organic Roma tomato, diced

1 can organic/low sodium garbanzo beans, drained

4 pieces of pimento cut small

2 tsp. lime juice

1 tsp. curry

pinch of ground cardamom

sea salt

cracked black pepper

splash of balsamic vinegar

tiny splash of white wine

Toss together gently and chill.

Smoked Potatoes

These are so delicious and guilt free because you don’t use any fat in cooking. To hurry things along I microwaved (which I try not to do often) 1 red potato per person.

Coat a nonstick skillet with nonstick spray and let it get hot.

Quarter the cooked potato and add to skillet – use high heat so it browns quickly without mashing the potato.

Sprinkle with sea salt, smoked paprika, and crushed herbs.
