This week has been...interesting, to say the least. I finally quit my job after a long and exhausting period of trying to get my boss to give me more time, which ended up being impossible. Therefore, on to bigger and better things!
First off, the most amazing salad I've probably ever made:
Raw Kale & Green Apple Salad w/ Kombu
I chopped up some red russian kale (the last from my garden), half a green apple, and some rehydrated kombu. Then I topped it with sesame oil, olive oil, salt, and sesame seeds. So good!!
Next up, I wanted to try a technique for roasting peppers that I'd seen once. So,

I added thyme, basil, olive oil, garlic, salt, pepper and vinegar, then processed in the food processor (not shown). Mmm.
This was also a good week for my garden.

Most of these can't be planted right now, because they require much cooler weather, but I'm going to try out some more peas (since most of my plants look dead) and jalapeno peppers.

Farm stand haul
Happened upon this fabulous farm stand while coming back from the garden center. This is just a sampling of what I got: roundish squash, roma tomatoes, spring onions, cherries, nectarines, and white peaches. Plus

Also went to the local farmer's market, because I rarely ever go just for myself. String beans, zucchini, yellow squash, raspberries, and a strawberry plant (!!!).
Finally hit up Pangea Vegan Store, which I really just discovered but I found out it's only open on the weekends, and not yesterday, obviously. Vegan parmesan, agar agar flakes, vegan caesar dressing powder, chocolate mousse mix, white chocolate and Sweet & Sara vanilla marshmallows! I can't wait to use these beauties in something fabulous. I almost bought Ricemellow marshmallow fluff but I held out for next time.
I also decided to try some new recipes from Extra Vegan Za, my brand new cookbook. It's so amazing. Plus, it's cool enough to turn on the oven today!
I wanted to make the Triple Almond Cookies, but discovered I had no almond butter. I have cashew butter, sunflower seed butter, peanut butter...but no almond butter. A while back La Belle Vegan posted a recipe for homemade almond butter. I sort of remembered how to make it, so I pureed some almonds, cinnamon, and a few tablespoons of water in the food processor and voila--almond butter. Then I lightly processed some more almonds for the "sliced almonds" slash "chunky" factor in the almond butter that the recipe calls for.
Then I replaced the oil in the recipe with applesauce, and worried that I had mismeasured, but they turned out fine (thanks, Isa).
Triple Almond Cookies
These are so good!! Crispy on the outside, and cakey on the inside. Great flavor too.
Also tried the Zucchini Lemon Poppyseed Muffins, which sounded way too good to pass up. Plus, farmer's market zucchini waiting to be used, hello?!?
Um, these are fantastic.
Once again replaced the oil with applesauce. These will make a very good treat for someone, just have to decide who.
Last night's fireworks were amazing. I went down to the DC mall to see the big show. Yay, DC. I love it.
