Cinnamon Sweet Potato Pudding with Oats

Sweet potatoes are crazy good-for-you, and oatmeal is not only delicious but also what I like to classify as a "colon scraper." Yup, oatmeal just bulldozes all the funky stuff out of your bowels and pushes it to neverland. It's really great stuff to have on hand. And, hey, both sweet potatoes and oatmeal are ridiculously cheap. You just can't go wrong with this recipe! It makes a lot and it hardly costs anything. It's perfect for breakfast, a snack or dessert. And it's super healthy. So, go ahead and have seconds. Your happy gut and perfect skin will attest that you did. Enjoy!

This is one of my favorite recipes from The Cancer Project 's Survivor Guide! It's so easy.

2 large sweet potatoes
2/3 C rolled oats
1 C soy milk
1/4 C agave nectar or maple syrup
1 tsp cinnamon
  • Peel the sweet potatoes, cut them into chunks (about a square inch each), and boil until soft. Then drain and mash. 
  • Allow mashed sweet potatoes to cool.
  • Put cooled mashed sweet potatoes, oats, soy milk, agave nectar and cinnamon into a food processor and blend until smooth and creamy. If you have a small food processor (like I do) you may have to do this in halves. 
  • Place mixture in covered container and refrigerate until chilled. Will keep several days in fridge.
