Chocolate Chip Cookies

Chocolate chip, almond butter, oatmeal cookies to be exact! I’ve made these cookies countless times and they are always a hit. I’ve fed these to a group of ravenous (and not at all vegan) climbers with no complaints, which is usually a good indication.   If you’re looking for a variation on the standard chocolate chip cookie, these are a great way to go.

Chocolate Chip-Almond Butter-Oatmeal Cookies

2 tbsp flax

1/4 cup + 2 tbsp water

2 1/4 cups whole wheat pastry flour

1 tsp baking powder

1 tsp salt

1/2 cup earth balance, softened,  or coconut oil

1/2 cup creamy almond butter

3/4 cup turbinado sugar

3/4 cup brown sugar

1  1/2 tsp vanilla extract

1 cup chocolate chips

1 cup rolled oats

Preheat oven to 375°F. Line two baking sheets with parchment paper.

Combine flax and water in a small bowl, whisk to incorporate, and set aside.

In a medium sized bowl, combine flour, baking powder, and salt.

In the bowl of a stand mixer fitted with the paddle attachment, combine earth balance, almond butter, both sugars, and vanilla extract, and beat until homogeneous. Pour in flax mixture and beat well.

Slowly add flour mixture and beat until incorporated.

Stir in chocolate chips and oats until well combined.

Drop by tablespoonfuls onto parchment, flattening each cookie slightly.

Bake for 10-12 minutes, until edges are golden.  Let cool on pan for a few minutes, then remove to cooling racks to cool completely (or just eat straight away, your choice).

Makes about 40.

For a delicious variation, apples can be substituted for the oats: shred 2 medium sized apples, place in a fine mesh sieve, and squeezed out all juice. Mix the apples in before incorporating the flour and proceed with the recipe as written.
