Broccoli and fresh herb soup

This is a simple soup made with steamed broccoli. By steaming the broccoli you preserve the positive health benefits of this amazing vegetable. Then it is blended with added fresh herbs like parsley and basil.












To make this soup first steam a broccoli. No need to throw away any part of the broccoli. Use the whole broccoli including the stalk:








Steam a few potatoes together with the broccoli. In the meantime sautee an onion with garlic. When the vegetables are steamed you can place them in a food processor or blender. To thin the soup I use the water left over from the steaming. The onion also goes in the food processor. Now add a full handful of fresh herbs. I like to use parsley and basil- really delicious! I also add a full teaspoon of dried thyme herb. Add vegetable stock powder (bouillon) and turn on the food processor. Let the soup blend and then taste if you need to add more stock powder. Add pepper and more water if needed. Garnish with some parsley. Soup is ready!
