Saturday mornings the boys tiptoe down the hallway, floors striped with early morning light from the windows above, into our bedroom and under the covers they dive. Delightful little giggles in anticipation of their most favorite family tradition, Saturday morning pancakes!
Ok, ok, so it doesn't go down exactly like that, more like this. Miles sprints down the hallway, busts open our bedroom door, jumps on our bed. That, of course, wakes up the little one, who has been sleeping contently between us since 3:00 am. Miles' jumping wakes up Lyric, and the two of them squeal in delight, and pester for about 15 minutes about the pancakes. At first I ignore it, then beg and plea for 5 more minutes. 10 minutes later though, I'm being dragged out of bed by our precious little ones. Then, standing there in the bathroom doorway, with robe on inside out and toothbrush hanging out of my mouth, I glare at my peacefully sleeping hubby (who has magically slept through it all). After I shoot him a few dirty looks and telepathically tell him how I intend on seeking revenge...I head down the stairs, boys jumping and cheering all the way to the kitchen.
Really, though, the boys look forward to this day every week. Two years ago, when Lyric was born, Ruben and I came to agreement, we each get one day a week to sleep in. Saturdays are his, Sundays are mine. Instead of dreading the early morning wake up call, I decided to embrace this bonus time with the boys. What better way to start the day than sitting atop a (flour dusted) kitchen island with two smiling faces, covered in pancake batter?
Each month I try a new recipe, this time we tried Bob's Red Mill Gluten Free Pancake Mix. We tossed in some bananas and blueberries and were delighted with, what we think, to be the greatest pancakes ever! Now, of course, they are vegan gluten-free pancakes, they aren't the sort you get at the local pancake house, so don't even try to compare them. Put it this way, these are so amazing that the smell that permeates the house, and drags my sleepy husband right out of bed. (sweet revenge).
1 package of Bob's Red Mill Gluten Free Pancake Mix.
1/4 cup fresh blueberries
Almond (hemp, soy or otherwise) milk
1/4 tsp ground cinnamon
1/2 tsp vanilla
Smash two bananas in a steel mixing bowl.
Prepare mix according to package directions.
Sub egg for flaxseed eggs (1 1/4 tablespoon ground flaxseeds and 3 tablespoons almond milk)
Add banannas, whisk.
Add cinnamon and vanilla
Fold in blueberries.
Let the mixture sit for a minute or two.
Cook as directed on package.
Top with light Agave nectar and serve with fresh blueberries and sliced bananas.
