I came home with the first blackberries (bramen) from our vegetable garden, and made these muffins. I like the combination of chocolate with blackberries. There are chunks of chocolate in the muffins, but you can also add a chocolate sauce to serve.
100 g (1 cup) AP flour (gebuild meel) 90 g (3/4 cup) whole-wheat flour (volkorenmeel) 1/4 tsp salt 1 tsp baking soda 1 tsp baking powder 4o g (1/3 cup) sucanat 100 g dark chocolate, cut into large pieces about 1 cup of blackberries, frozen
150 ml (3/4 cup) soy yoghurt 1 tsp vanilla essence few drops of butter-vanilla essence, optional 2 tbl oil 1 tbl lemon juice 100 ml (1/2 cup) vanilla soy milk
Preheat the oven to 180 C
Mix all the dry ingredients in a large bowl. In another bowl mix the wet ingredients. Pour this into the large bowl and mix. Then take the blackberries out of the freezer and add them to the batter. I always freeze my berries before using them so that it's easier to work with them. Carefully fold the berries into the batter. Then spoon the mixture into a muffin form. Bake the muffins for about 18 minutes. Take them out of the oven and let them cool before removing them from the baking form. The chocolate sauce is a mixture of organic dark chocolate melted together with maple syrup and vanilla soy milk.
