I made some Nacho Cheese by making some oat cheese and adding another tsp of paprika, 1 tsp chopped raw jalapeno and 1/4 tsp red chili flakes.
Cook up two tortillas and smear each one with nacho cheese.
Put one, cheese side up, in a hot, ungreased pan and pile on the vege filling. I also put avocado slices in mine. Hot avocado is delicious. I thought I had photos of that but in the excitement I guess I didn't :(
Put the second cheese smeared tortilla, cheese side down, on top of the first tortilla with cheese and vege filling. Cook on griddle or hot pan until brown on both sides.
