I finally obtained a copy of Vegan Cookies Invade Your Cookie Jar! Thus far I've only made one recipe, but it was fantastic! The Banana Oatmeal Breakfast Cookies (page 92 for those of you following along) really caught my eye, because, well, I like to eat cookies for breakfast. And this recipe is telling me it's okay to eat cookies for breakfast! Score!
I made two substitutions because I didn't feel like running out to the store. Instead of brown rice syrup I used maple syrup, and instead of toasted pecans or walnuts I used flax seeds. Yum! These cookies rock, and yes, I ate them for breakfast the last two mornings! Four of them kept me full until lunch time, which is about a five hour span for me. I expect that I will be baking a lot more cookies in the near future!

This post over at Food Snobbery is My Hobbery inspired me to make my own baked pasta dish. I used white beans for protein, and I used a new (to me) pasta: acini di pepe, a very tiny little pasta. I boiled the pasta and mixed it together with the beans and fresh baby spinach, and then mixed in canned tomato sauce. A quick sprinkle of nooch and a light drizzle of oil and I popped it into the oven for 20 minutes. I love the combination of textures! This was great eaten on a bed of spinach.
My new job is going well. I play a small part, putting together files and scheduling appointments (well, I haven't graduated to scheduling appointments yet. But soon!). I stay positive by remembering that if I do my small part very well it makes it that much easier for the veterinarian and vet techs to do their jobs well. A big job bonus is getting to wear scrubs! At first I kept wondering when someone would notice that I wore pajamas to work, but everyone else was wearing them, too!
