Baked Tofu

I am rather ashamed to admit this-as I have been eating tofu for about the last 5 years-but I have never had baked tofu…What the hell have I been missing out on!

To be honest I am quite lazy when it comes to tofu, so I either buy it pre-marinated and just chuck it in a salad or I scramble it with some spices. Today I wanted to mix it up though, so it was time to break out the baked tofu.

I just went with a simple marinade of soy sauce and sesame oil, letting the tofu marinate for a while before baking in the oven for 35 minutes, I brushed it a few times during cooking with the marinade. Then it was time to try the baked tofu:

Baked tofu, Roasted Sweet Potato and Butternut Squash and steamed Kale

Served alongside a huge portion of roasted sweet potato and butternut squash ( which I subsequently topped with a drizzle of tahini, my new favourite combo!) and steamed kale. Baked tofu verdict is a thumbs up, the texture changes completely but I really liked it. Next time I will be more daring with my marinade.

The above is actually the first proper meal I have had all week. I have had a stomach bug (boo!) so have eaten very little all week and what I have eaten has been tres boring and tres plain. read: rice cakes, bananas, apples, oatmeal.

I think the culprit for the bad tummy was this baby:

3 day old rice noodle leftovers, which also were out of the fridge for a considerable time during that period (oops!). Won’t be doing that again!

I can’t believe it is April tomorrow! Where did March go? I think I will come up with some goals for next month for a post tomorrow. Do you guys have any April goals?
