Avocados for Vegans!

I think that avocados are one of the best ways to get that creaminess that cheese milk and cream offer. I love avocados, and there is a lot of evidence that avocados help us digest our food!!

Avocados are a good, healthy fat. If you put some seasoning salt on them, they really do taste "cheesy"! My local Asian bagel place offers avocado smoothies, made with avocados and apple juice. I haven't tried it yet, but I'm curious to see if it has an ice cream like flavor to it, if well-chilled. I have made a chilled avocado soup, from Robin Leach's "Rich and Famous Cookbook". You can skip the dairy and just use avocados, seasoning and a touch of rum, for that fancy tropical resort taste!

Here is a recipe for enjoying the Avocados.

Put some Better than Cream Cheese on a slice of bread, sprinkle some salt (a little extra tastes good) and pepper, put half an avocado in slices, and couple of slices of tomatoes. Put another slice of bread to make it a sandwich. This tastes better on a white soft bread than whole wheat bread. Also warm up the bread on a pan after preparing this sandwich.

I have read about avocados helping us digest our food. They did a study where half of a group ate salad and half ate salad and avocado. The group that ate the avocado actually absorbed more nutrients from the salad!
Interesting ideas. I love them straight out of the shell. And on anything! I once had a casserole in San Francisco with avocadoes and crab meat. To die for!

I enjoy avocados on veggie burgers with some freshly ground sea salt and lemon juice drizzled on them.

My all time favorite avocado recipe is just simple homemade guacamole. To me, this is the best way to experience creamy avocado!
