Sort of like an apple cake, but I'll call it a bread. My daughter loves this bread warm with strawberry jam. I added gingerbread spice the second time I made this and it turned out even better than just using cinnamon.
240 g (2 cups) whole wheat flour 120 g (1 cup) all purpose flour 2 tbl grounded flax seed (lijnzaad) 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 2 tsp cinnamon 1 tsp gingerbread spices (koekkruiden) 85 g (1/2 cup) sucanat
95 g (1 cup) walnuts 80 g (1/2 cup) raisins 2 apples cut in cubes
60 ml (1/4 cup) maple syrup (ahornsiroop) 60 ml (1/4 cup) canola oil (koolzaadolie) 1 tbl molasses syrup 1 tsp cider vinegar apple sauce made from one apple plus 125 ml (1/2 cup) water 375 ml (1 1/2 cup) almond milk (or another milk)
preheat the oven to 200 C
Place all the dry ingredients in a bowl, except for the raisins and walnuts.
In another bowl mix all the remaining ingredients together. Add the walnuts, apples and raisins to this fluid mixture:
To make the apple sauce cook the apple (which is peeled and cut into cubes) in some water until soft. Then using a hand blender blend the apples into a puree. Add this to the wet ingredients.
Now pour in the wet ingredients with the dry and mix until you get a smooth batter. Pour the batter in a baking form and bake for 30 minutes or longer if the bread still is wet from inside- the toothpick should come out clean. Maybe you'll need to cover the bread with parchment paper so that it doesn't brown too quickly. Take out of the oven and let the bread set before taking it out of the form. Let the bread cool on a wire rack.
