After reading Crazy Sexy Diet by Kris Carr, I became more enthusiastic about raw foods. And while I know how to make the raw food basics, I wanted to get myself into a raw food cookbook or two to see what those creative raw food authors had come up with. Now, my first instinct was to run out to Barnes & Noble and grab one of those shiny new Ani Phyo books I’ve been eying, but following my own advice , I dug out one of the Book Publishing Company raw vegan cookbooks I already own and had yet to really uncook from.
I cracked open Alive in 5 by Angela Elliott and chose three recipes to make right away: Broccoli in Cheese Sauce (page 90), Mind-Blowing Dressing (page 73), and Lemon Pudding (page 113). Unfortunately, I didn’t take any photos that night (these dressing photos are actually the Hemp Maple Dijon Dressing from the May IET newsletter, but hey, dressings kind of all look alike…), but I just have to make the Broccoli in Cheese Sauce again and take photos to share; it’s phenomenal! As for the Mind-Blowing Dressing, it’s definitely one of my new favorites. It’s quick, so easy, and calls for ingredients I always have on hand. And with thanks to BPC, I can share the recipe with you. Try it for yourself!
4 tablespoons freshly squeezed lemon juice
2 tablespoons extra-virgin olive oil
2 garlic cloves, pressed
1/2 teaspoon dried tarragon
1/2 teaspoon Italian seasoning
1/2 teaspoon Himalayan salt
1/2 teaspoon freshly ground black pepper
Combine all the ingredients in a jar. Seal tightly, and shake until well blended.
Note: This dressing is fabulous on almost every type of salad imaginable. If you put it in the freezer for awhile, it will become very firm and will make a delectable buttery spread. This dressing may also be used to marinate sun-dried tomatoes and mushrooms.
