It’s finally starting to hit me hard. We are moving in 2 weeks. Not just moving, but moving to a place where we don’t have close friends and our family will be about 4 hours away. A place with more civilization, more opportunities, and where Micah will officially begin the journey to his career in software engineering. I feel so many emotions – especially in the last few days. I don’t know what I will be doing next year. I may have a full-time teaching job. I may be substitute teaching. I may teach some adjunct classes at a local college. I may have my own private voice and piano studio. Who knows. The only thing that is certain is that God is our Captain and we are following His lead. We know this is where we are to be. And through all of this uncertainty, I am so grateful for our close friends and family that are praying for us and helping us through the final weeks in Burlington as well as praying for our future. They really aren’t THAT far away (there is always skype/email if you have the internet – which my parents STILL do not have, but in that case – phone calls are great!).
After my crazy day (emotionally), I decided to cook. You see, for me, cooking is a stress reliever. I put all of my strength into cooking. Although this meal is not the healthiest (ok – it’s not healthy at all!), it just felt good. And I REALLY needed some feel-good food. For sure. I’m sure I’m not the only one out there that needs this every once in a while- come on, ‘fess up!
Alfredo with roasted red peppers and mushrooms
I used this Simply Organic Alfredo Sauce mix, then added some portobello mushrooms and roasted red peppers. It was divine! I also used whole wheat spaghetti. I’m at the point where I’m not buying non-perishable food items unless there is a NEED. I’m trying to use up what we have before we move. I definitely would have added more veggies, but didn’t have many on hand. So, it is what it is. Would have been great with some asparagus!!!
Now onto an amazing salad recipe……broccoli slaw!
1 package broccoli slaw
1 cup red grapes
3/4 cup citrus poppy seed dressing
handful each of sliced almonds & sunflower seeds
Freshly squeezed juice of 1/2 lemon
Toss all ingredients together, and you have it! This is so easy and a very refreshing salad for the spring/summer.
This one is a keeper!
One final note: I had to add more spaghetti than what is seen in the picture (at least on my plate!). As I’ve told you before, I’m not a big “sauce” person. Too much of any kind of dressing, sauce, etc. makes me gag!!!
What do you do for stress relief? I tend to do lots of cooking, but it varies – I also walk, swim, or do some reading if I need to relieve some stress.
