“PB + J” Energy Bites

One of the things I missed the most while our stuff was in storage was making my own energy/protein bars, they are pretty much my favourite grab and go snack, and I’ve developed an expensive and unsustainable habit of buying them over the last few weeks!


I couldn’t wait to be reunited with my food processor so I could whip up a new batch of bites. These actually pack a decent amount of protein too at 3-4g per ball which are roughly around 75-90 calories depending on the size. They are great for an energy boost if you are on the go, or before or during a workout. I thought I would twist up the classic PB and J combo by using my own fig chia jam that I had made earlier in the week.

One of the sellers at the farmers market over the weekend had hardly any figs left and they were a bit passed their best, so he gave me a load for free. I cooked the figs down with a little water and 1 tbsp of chia seeds to make a lovely healthy jam. You can use regular jam in this recipe or you can make your own chia jam, I’ve made strawberry and blueberry before and both are equally delicious.


“PB + J” Energy Bites

  • 1 Cup of Rolled Oats
  • 4-5 Medjool Dates
  • 1/2 Cup Puffed Quinoa/Brown Rice
  • 4 Tbsp Peanut Butter (Any nut/seed butter will be awesome)
  • 2 tsps Cinnamon
  • 1 Tbsp Maple Syrup (any liquid sweetener, or you can just leave it out and add a dash more milk/water)
  • 1 Tbsp Coconut Oil
  • 1/2 Scoops Sunwarrior Natural Warrior Blend (Any plain tasting protein will work well, or you could go chocolate for a twist!)
  • 1 Tbsp Chia Seeds
  • 1/4 Cup of Fig Chia Jam

Process the dates in the food processor until they come together, add all the other ingredients and blitz until it looks crumbly in texture. Add enough water/non-dairy milk (a drizzle at a time) to get it to come together- you don’t want the batter to be wet. Roll into balls, and refrigerate or freeze to set. I got 18 out of this, some were smaller than others, so you’d probably get 15-16 good sized bites.

PB + J Bites

I enjoyed a couple of smaller bites alongside a pink lady apple for a perfect mid morning snack. I’m not sure how long these will keep due to the fresh fig chia jam, I’d say 3-4 days in the fridge or obviously longer if you freeze them and get them out when you need a pick-me-up.
