K gets obsessed with pumpkin. I love pumpkin especially with all of its healthy aspects. Reading through the blog world I have read over and over about pumpkin shakes, breads pancakes...etc. So I decided to try a little pumpkin shake of my own. As you may know...I am a big fan of the Green Monster and all of its healthy qualities. So for the holiday season I attempted a Pumpkiny Green Monster. The ingredients included:With the Thanksgiving holiday coming along...my cousin
1/2 cup of canned pumpkin1 cup of almond milkIce1/4 cup of water2 cup of raw spinach1/2 scoop of vanilla protein powder1 tablespoon of flaxseed1 bananaCinnamon and Nutmeg to taste
Blend and serve...in a fancy glass of course. Great way to get lots of veggies in! Very yummy if I do say so myself....and in case you were wondering, no you don't taste the spinach at all! Even though the drink is totally green. (sorry my picture did not save....next time)
Yay for three day work weeks. The turkey trot is coming along soon.....only 3 more days to train this week. Yikes. Wish me luck. I am thankful that I am able to spend Thanksgiving with my family. This year has been a year of health concerns over and over but thankfully everyone is on the mend and will be able to spend the Thanksgiving holiday together as a family. Yay!
