Healthy & tasty post training recipe of the day: Kale with cranberry and pine nuts

Editor's note: Our friend Liz over at Purley Elizabeth just posted this tasty and healthy recipe to her facebook page and we though it would make a wonderful and healthy post training meal.
Kale with cranberry and pine nuts
Ingredients: 1/4 cup pine nuts 3/4 pound kale, chopped 2 cups water 2 tsp olive oil or coconut oil 2 garlic cloves, minced 1/3 cup dried cranberries salt to taste
Directions: Preheat oven to 325. Toast for 5 minutes or until golden brown. Set aside.
Bring 2 cups of water to a boil. Add chopped kale and cover for 5 minutes. Remove and drain. In a skillet, heat olive oil/coconut oil over medium heat. Add garlic and saute until fragrant. Add cranberries and saute for about one minute. Add kale and stir to combine. Season with salt and serve with toasted pine nuts.
