Healthy breakfast recipe of the day: strawberry chocolate chip muffin

When I developed purely elizabeth muffin mixes I felt adamant about not adding dried blueberries or dried apples because I wanted the FRESHEST muffin possible that would BURST with seasonal flavor. A dried blueberry just didn't cut it.

..An unintentional benefit is that one has the ability to create their own flavor combinations


So with strawberries popping up all over the market, I got in the kitchen and created this strawberry chocolate chip muffin. Go ahead, give it a shot! It is the perfect weekend brunch item.
1 purely elizabeth blueberry muffin mix
1/2 cup unsweetened applesauce
1/2 cup olive oil
1/2 cup pure maple syrup
1/4 cup palm sugar
3/4 cup chopped organic strawberries
1/2 cup vegan gluten free chocolate chips

Preheat oven to 375. In a large bowl combine wet ingredients and stir. Pour in strawberries, chocolate chips and muffin mix.  Mix to combine.  Pour into greased mini muffin tins. Bake for 20-25 minutes.  When the muffins are done, let stand and cool before taking out of the tins.
