It was so nice having an extra day off for Labor Day. I spent the weekend cooking, shopping, working out, and watching movies. I had to sneak some resting time in there because two of my close friends are coming up next weekend. I need to make sure I keep my energy up! On Saturday night, I made some spicy pineapple fried rice that came out amazing. This is a perfect dish to create if you have some leftover brown rice that you need to use up.
