What’s in a Color? Beta-Carotene

Did you know that the color of your food can often tell you something about what’s inside it? Carrots, pumpkin, sweet potatoes and cantaloupe have a lot more in common than just being orange. These fruits and vegetables have beta-carotene, which is known to neutralize free radicals that may damage cells. It also bolsters cellular antioxidant defenses and can be made into vitamin A in the body.
