Here is a sneak-peek at a custom table that my husband Karl was asked to build for a well-known outdoors company. He designed and built this piece himself and I couldn't be more proud of him and this beautiful piece that is nearing completion. Built out of 150-year-old wood from an old mill that was torn down in the mid-west, this piece is a perfect example of sustainability. Karl has a passion for repurposing things that have lost their original usefulness and making them into something even more functional and beautiful, and that is super hot.
So, for his birthday I am making the same cake that I have made for almost all of his birthdays since we met. Because it's his favorite, and I'm nice like that. Both of our families have had this recipe in the archives for decades; his calls it "Wacky Cake", mine calls it "Atomic Cake". It's really the world's easiest cake to make from scratch, and it's vegan-friendly. We typically health it up a bit from the original version, but I'm not going to claim it's good for you. As previously mentioned, I'm a nice person, so I will share my recipe with you:
3 c flour2 c sugar1/3 c cocoa2 tsp. baking soda1 tsp. salt2 c water3/4 c canola oil1 T vanilla2 T vinegar
(FYI...I made adjustments, such as mostly organic ingredients, whole wheat flour, and melted coconut oil instead of canola. Of course, the consistency and flavor is going to tweak slightly as a result of wavering from the original.)
Mix dry ingredients in large mixing bowl. Make hole in center and pour liquid ingredients. Mix on low until well mixed, but don't beat. Pour into ungreased 9"x13" pan. Bake for 30 minutes + check center -- adding minutes as needed until toothpick comes out dry. Try not to over bake, it should be moist. Frost in pan (as too soft to remove) with your choice of frosting. Eat. Say "yum" one hundred times.
