I woke up to another chilly, fall day here in Minnesota. Yesterday, it stormed almost the entire day, and looking at the weather, it looks like it is going to storm again.
It’s safe to say that my spirits were a little down this morning. All I wanted to do was crawl back into bed and throw the covers over my head.
My oatmeal was an attempt to coax my brain into waking up. I made my Maple Berry Banana Oats , since my brain was too intent on sleeping to think of any new flavors for oatmeal.
At least the strawberries made me smile a little bit on this dreary morning
The rest of my morning was consumed by more law school reading. Reading in the mornings has been kind of difficult for me, because I haven’t been drinking any caffeine. At all. Maybe I should try making coffee again? I only really like coffee when it has a lot of sugar in it, which is why I really don’t drink it anymore.
By lunch time, I was feeling sort-of blah. Wanting to spice up my day, I decided to try this new instant rice at I found at Target the other day.
I was particularly impressed with the basic ingredients, all of which I could pronounce!
Ok, I might pronounce “URAD DAL” wrong. What language is that anyway?
So I had high hopes for this one. I had half the package, mixed with some leftover black beans I had, with red pepper slices on the side.
The difficulty with simple food is that it can sometimes taste plain. This did. I added some soy sauce after to give it a little more flavor. I’m not sure I’d buy it again, despite the ingredient list. Maybe they make another kind that has more flavor?
But you can never go wrong with red pepper. Red pepper, strawberries, tomatoes…maybe I am just predisposed to red foods? I always did like red fruit-roll ups
