Slow Cooker Honey Soy Chicken and Noodles

Last night Dave and I tried a new crock pot meal.  It was ok but not one of my faves.  I think the soy sauce was a bit overwhelming for me but I did like that it incorporated some noodles because most of my crock pot meals involve rice.  Maybe I will try to alter the recipe a little to get a flavor that I do like! :)

Slow Cooker Honey Soy Chicken and Noodles

Serves: 4

  • 3-4 boneless, skinless chicken breasts
  • 1¼ cup low sodium soy sauce
  • ⅓ cup honey
  • ¼ cup rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon chili sauce
  • 2 teaspoons Dijon mustard
  • 1 teaspoon pepper
  • 1 (8 ounce) pkg. Soba Noodles, cooked according to package directions
  • 2 tablespoons sesame seeds

  1. Place chicken in slow cooker.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, chili sauce, mustard and pepper.
  3. Pour prepared sauce over chicken.
  4. Cook on high for 3-4 hours or low for 5-6 hours.
  5. Shred chicken and return to slow cooker.
  6. Add in cooked noodles and stir until combined. Garnish with sesame seeds.
