Simple Tomato Sauce

 This is and has been my "go to" tomato sauce FOREVER! And it just so happens t fit into my Paleo lifestyle so I'm double happy! 

I'm Italian. I grew up eating my grandmothers authentic Italian Cuisine and I've always had a deep love Real Italian food! 

The reason I love this sauce so very much is because it tastes fresh, zesty, and light. Secondly it's sweetened ever so slightly with carrots which is divine!!! Did you know almost every store bought to ago sauce is loaded with sugar? Yup! Read a label or two next time in your in the grocery store. 

You will need:
2 large cans of whole peeled tomatoes
1 onion (white, yellow or red) diced small
4 cloves of garlic through the garlic press or minced
2 medium sized carrots finely grated 
A few sprigs is fresh thyme, basil and oregano (you can substitute dried if need be)
1/4 cup of extra Virginia olive oil
Salt and pepper to taste

Method: 
In a medium/large saucepan heat the olive oil on medium. Add in your onions and let sautée for about 5 minuets, now add in your carrot, garlic, and your herbs and let sautée about 10 minuets. While all your ingredients are marrying you can open your cans of whole peeled tomatoes, pour the juice into the pot with the other Ingredients and either smash the to Arles with your bare hands over a large bowl or dice on a large cutting board and add to a toes to the pot. Now add your salt and pepper and let simmer for about a 1/2 an hour. Serve hot over pasta, zuchini noodles, meatballs or anything else you can imagine!
