Project Pinterest with ILYMTC

When I saw that the lovely AP from I Love You More Than Carrots was doing a ‘Project Pinterest’ Link up with ‘an attempt of something you made/crafted off Pinterest,’ I wanted in. I forgot last week but this week I am going to report on the lovely Ham and Cheese Quinoa Quiches I made from Pinterest. I’ve done a few things off Pinterest, which I’ve recapped previously. The Fathers Day Craft with a paw print , The Map Project , Silhouette Dog Portrait and Yarn Wreath , Girl Scout Samoa Bars (FAIL) , Asparagus Fries and Carmel Salted Brownies, Reece’s Peanut Butter Bread (meh) and Cake Pops (FAIL) , Chocolate Covered Peanut Clusters (AMAZING) Baked Zucchini Chips (FAIL) Soda Cupcakes (yum) Strawberry Lemonade Bars (meh) Cucumber Boats (yum) , Pallet Board Flag (B did this more than I did, but it still is awesome) Whoa, I’ve actually made a lot of crap off Pinterest. And with the holidays coming up, you bet that list is going to keep growing.

I have tried to eat more healthy lately and have been shocked by how many good recipes I’ve had thus far… including this!

 

What you need:

1 cup cooked Quinoa

6 egg whites (1 cup)

1 cup diced spinach

3 slices of Peppered Lunch Meat

1/4 cup Soy Sation Cheddar Cheese (I am shocked to even admit this is good, but it is)

Mix the top ingredients together in a mixing bowl. Looks a little weird and is a little goopy, but it works.

I like using muffin wrappers because it helps keep them together and then they come out of the pan easier without using oil. You pour the mix into the muffin cups, or lightly oiled tin and then pop those babies in the oven at 350 degrees for about 25-35 minutes, or until the outer part of the little “quiches” are browned. Let them cool for about 10 minutes in the pan and then take them out and you’re all set to go! I love making a batch for the week, and usually eat one or two a day for breakfast with a smoothie. They work best if you put them in the fridge to congeal together and the reheat them. If you try to eat them right off the pan you get some cheesy paper, which I don’t mind.

They take me about 10 minutes to prepare, the hardest part is cracking all the eggs to get the egg whites, and then they bake from about 35 minutes. I am a big quiche fan, and they are relatively similar and much better for you, especially with Quinoa, which I didn’t even realized I liked!

Wonder what I will make for next Monday… I think it’s time to bake again!
