Tonight I did one hour of Spinning (again nursing my knee). When Mel and I got home I whipped up a delicious meal. I LOVE Indian Food, especially Chicken Tikka Masala. I was walking in the "Around the World" section of Whole Foods and found a spice packet. The brand is Arora Creations.
What you need
3-4 Chicken Breasts, cut and cubed
1/4 cup of Olive Oil
2 Garlic cloves minced
1/4 onion diced
1/2 cup of minced Ginger ( I didnt use, not a fan)
1 8 oz can of plain tomato sauce
Clinantro, handful washed and ripped.
Packet of Spices
Sautee Onion and Garlic in Olive oil
Add in Spices and Tomato sauce and cilantro
Add Chicken
Cook 10 minutes over medium high heat
Add 1/2 cup of water and cover
Simmer for another 10-12 minutes, until chicken cooks through and sauce Thickens
Nan is 3 pts per serving, Chicken is 4 pts per serving. Yields 3-4 Servings
If I had more time I would have made Whole Grain Basmati Rice...Instead I had some store made whole wheat nan
It wasnt as good as in a restaurant, but I know it was a lot healthier and was satisfying!
