Today’s Meatless Monday recipe is a dessert! I don’t make sweet things often because I have yet to master the art of not eating it all. However, I needed something to bring to my friend’s house. I had just gone grocery shopping and didn’t want to go back. I noticed the peanut butter in the fridge and concocted this recipe. It’s a bit more time consuming but so good!
Sweet Escape: Peanut butter and jelly cookies Servings: 24
1/2 c pretzels
1/2 c quick oats
1/4 c brown sugar
1/4 c sugar
1 c flour
1/2 c peanut butter
1/2 c water
1/4 c vegetable oil
a bit of baking soda
What to do:
Preheat oven to 35o. Either put the pretzels into a blender or food processor until crumbs. Check out my pretzels by the way…
Texas people REALLY LOVE Texas.
Mix together all ingredients except the jelly. Take some of the dough into your hands and form a ball. Smash it down until it’s flat (but not too thin). Add a 1/2 tspn jelly to the center. It gets easier as you do it.
Fold in half and pinch the sides together (like making wontons).
Spray a cookie sheet with some Pam. Add the cookies. Bake for about 8 minutes, or more. The bottoms will be brown.
Cool. Then enjoy! Seriously, though. Let them cool. The jelly in the middle is SO SO SO HOT and will burn your mouth. Be careful with them, they are very delicate, especially before they cool off.
