Kale Salad with Life Alive Garlic Ginger Sauce

I have been trying to be good and bring my lunch when I can.  I want to try to save money and also eat healthy.  For the most part I have stuck to this, but because I make my lunch in bulk for the week sometimes I often get sick of the food I bring.  To help prevent myself from getting sick of my usual lunches, I tried to find inspiration for a new recipe.

My inspiration came from  Erin  because she made a delicious kale salad with a ginger nama shoyu dressing from Life Alive .  I just had to try it!  I didn’t ask her for her recipe because I wanted to try to find one for myself.  Then we have two recipes to try and compare.  I found  SarahFit’s   Amazing Ginger Sauce from Life Alive .  It was incredibly easy and may become a weekly go-to lunch sauce.

What can you use the garlic ginger sauce on?  It would taste good on rice, noodles, potatoes, pretty much anything.  But I made a kale salad.  I massaged the kale in olive oil and then mixed with brown rice, ginger-infused Love Beets , radishes, carrots, sliced grape tomatoes, mushrooms, edamame and broccoli.  This could be one of my new favorite lunches.  Although next time I think I may use with soba noodles and veggies!

{Warning:  Have breath mints or minty gum available! Your breath WILL be taken over by garlic and ginger!}

Life Alive Garlic Ginger Sauce

Serves: 4-6
 

Ingredients
  • 2 garlic cloves, chopped
  • 2 inches of fresh peeled ginger, chopped
  • 1 tablespoon of Tamari Sauce
  • 2 tablespoons of lemon juice (about ½ of a lemon)
  • 2 tablespoons of Tahini
  • 1 tablespoon of olive oil (or flax oil)
  • 2 tablespoons of water

Instructions
  1. Chop garlic and ginger
  2. Combine all ingredients
  3. Blend with immersion blender until smooth

{Note:  The recipe calls for use of the food processor, but I get lazy with cleaning it and decided to use my  immersion blender .  I like to use that thing whenever I can!}
