1 pound lean ground turkey
1 packet Trader Joe's taco seasoning
4 tablespoons olive oil*
1 package Trader Joe's organic taco shells
1 package shredded "Mexican blend" (cheddar and Monterey Jack) cheese
1 package Trader Joe's Avocado's Number Guacamole (I know it's cheating, but this stuff is homemade, fresh, and AMAZING!)
1 cup chopped chives
1 cup sour cream
Heat oil in a skillet and add ground turkey. Let the turkey brown for a few minutes and add packet of seasoning. Continue to cook and mix turkey until it's cooked all the way through.
In the meantime, toast the taco shells for four minutes in the oven at 400 degrees.
Once the meat and shells are done, serve "taco bar-style," adding ingredients as desired. I had approximately two tablespoons of everything in my dinner ones.
*Notes: Most recipes call for vegetable or canola oil. I went with what we had in the cupboard.
Next time, I would probably use only half the packet of seasoning. I don't know what I was thinking-- I'm a wimp who really can't handle spicy foods unless I've got like a liter of water handy (Seriously; this is deserving of a post of its own-- don't even get me STARTED on the spicy chile dark chocolate that was gifted to me on my birthday), which, thankfully, I did have on hand. They were a hit with the roomie, though!
