Hello devoted blog followers! I hope you are all enjoying the long weekend (five days for me, as I am in that in-between-current-and-new-employment-stage yet again).
My weekend was filled with food, and lots of it. Some choices were healthy (delicious $7 grilled salmon lunch entree on Saturday...Ikea Cafe, where have you been all my life?) and others were not. ( Roomie , did you seriously put out a communal bowl of M&Ms before leaving me alone in the apartment for four days? What were you thinking??) Yesterday was actually the first day of 2010 in which I didn't eat a single bite of fruit. I knew something felt off!
But I'm back and better than ever today, even enjoying a bowl of my signature oatmeal as I type. Dinner tonight will probably be the last of a newly-created spaghetti recipe I tried out on Friday night, which proved to be a hit. Spaghetti (pasta in general, actually) is pretty easy to cook, so I won't insult your intelligence by posting a detailed recipe. But see the following ingredient list if you're interested in testing it out
Friday Night Spaghetti
1/2 package whole-wheat spaghetti noodles
1 tablespoon olive oil
1/2 package Trader Joe's Fully-Cooked Sun-dried Tomato and Basil Chicken Sausage
1/2 jar Trader Joe's Garlic Marinara Sauce
2 cups sliced baby bella mushrooms
Parmesan cheese, to taste
