Dinner Fail, Chocolate Cake & Commitment

As you may (and should have!!) read, Sunday night was a complete and utter DINNER FAIL.

The sad part is, I had made this dinner before. And it looked good, right?


I mean, right? Just make sure your chicken is cooked, the rice is done, and you don’t put too much vinegar in your dressing. <I did all those.

Cheese Stuffed Chicken Breasts (from Better Homes and Gardens )

Let’s do this no-recipe style, kay?


First, mash up some ricotta, mozzarella, and parmesan. Add in some basil, oregano, and lemon pepper seasoning.


Hammer out that chicken breast with a meat tenderizer (or go MaryAnn aka my mom style and use a rolling pin) and gunk some cheese on there. I probably used a little too much cheese mixture, but as most of my family can attest, that’s not an uncommon occurrence.


Roll those babies up and pour some melted butter on top.

So, in following this recipe online, there is a drastic difference in baking time, causing my rare chicken!! The book said 20 min (or maybe I read the wrong recipe?) and the website says 45 min @ 175.  My oven was at like 400. Whatevs, it’s delish when it’s cooked, so just make sure these little guys aren’t pink.

Meanwhile, I totally coped out on the baking front and used a boxed mix for chocolate cake. For shame.  I whipped up some raspberry filling (um… butter, confectioner’s sugar, and raspberry jam) and chocolate icing that I wasn’t thrilled with.  Does anyone have a stellar recipe for chocolate they want to share?

Since I never got to do my 4th Cake in my Wilton Class 1 (I couldn’t make the last class), I decided to do a chocolate version.


My roses still aren’t as good as I’d like, but boy are they getting better!!

Today I had every intention to go to the gym after I taught my morning class .  I wanted to teach, run some errands, then run by the gym for a good hour before coming home to lunch.

I didn’t even shower this morning.

As motivationshower after workout… yeah?

Well, needless to say, it didn’t happen.

I finished up class around 11ish, and since the Container Store was on my way, I stopped there.

This sudden impulse to organize everything is not new. However, one of the qualms perks of Google Reader is I get all these great ideas I immediately have to implement.  Thanks to Beantown Baker’s post this morning, there were a few items I needed stat. (recap of implemented organization tools to come.)

After I left, I realized I was famished. So I decided that since all I had to do was stop at the bank, I would come home and eat and skip the gym.

But Kohl’s is on the way to the bank.

$30 later I left for the bank. (I seem to have this problem of accidently spending $$ a lot lately …) After the bank, straight home.  I did not pass go, did not go sweat my booty off, but went straight home.

Although I’ve taken an unintentional hiatus from SparkPeople (note to self: use sparkpeople), I still get their newsletters/articles in my inbox every morning.  And I read every. one. This article about learning to love veggies (featuring Caitlin ) inspired lunch.


Feta and Spinach Omelet w/ fruit salad :)


1 swirl of olive oil, 2 eggs and 1 egg white, with chopped spinach and feta


I ate about half of this banana, clementine (new obsession!!) and pineapple salad and saved the rest for a snack.  Good lunch.  Go team.

*editor’s note: if anyone knows where I can find a 20% off Bed Bath and Beyond coupon, let me know. I’m dying to finally buy another set of these dishes so that we have more than 4 place settings.

Now I’m off to organize my little heart out, and make myself run.  I’ve been on too long of a hiatus, and need to get myself in gear.

Therefore, I’m making a commitment.  Y’all are my witnesses: Adam and I are signing up for this 5k .
