Thankfully this Wednesday was a lot better than two Wednesdays ago. Work was busy but not too stressful, class was short and sweet, and my ride home on the bus was relatively uneventful. I couldn’t ask for more!
I know I haven’t been blogging for too long, so I don’t know how apparent on the blog it is that I cannot stand wasting food. I will literally eat the same thing multiple days in a row, or freeze things, in order to avoid throwing good food in the trash. What can I say? I don’t like being wasteful
Anyway, I decided to try and be creative with the remaining leftovers from Thanksgiving because honestly I could not eat another Thanksgiving-like plate! So, I present you with the sweet potato casserole and cream cheese sandwich!
Honestly, it wasn’t bad at all. It definitely would have been better with some cranberries but sadly my mom and Ian don’t like cranberries so we didn’t have any at our Thanksgiving. It also would have been better pressed on either a panini grill or a george forman. The microwave didn’t do the sandwich justice
(P.S. I have another creative leftover meal coming tomorrow that involves the remaining tofurkey. Any ideas?)
I rounded out the meal with some hummus and veggies.
I promise those brown specks aren’t dirt, just seeds that fell of the sandwich crust!
I also had an unpictured TJ Crusher for a snack this afternoon.
I’m spending tonight working on my paper and presentation for tomorrow but I promised myself that I’d actually cook dinner. I tried making a recipe for a shrimp and parsnip stirfry but it did not turn out well. Something just tasted off and I couldnt figure out what it was!
I loaded mine with siracha sauce to get it down!
Dessert was an attempt to stay away from the apple and pumpkin pies and to be a bit healthier. I mixed pumpkin with almond milk, maple syrup, and peanut flour. I topped it with some chocolate goldfish and a bit of granola
Lets hope it does the trick!
